It's never too cold to brew.

Recipe: My DonWeiser III
Style: American Light/Standard/Premium Lager
TYPE: All Grain
Recipe Specifications

Batch Size: 5.25 gal
Boil Size: 7.50 gal
OG: 1.039 SG
Color: 4.0 SRM
IBU: 16.9 IBU
Efficiency: 90.00 % (I really hit it this time)
Boil Time: 90 Minutes

Ingredients:
5.3 oz Rice Hulls
6 lbs Special Pale (Cargill)
1.5 lbs Rice, Flaked
1.00 oz Hallertauer [4.50 %] (60 min)
0.50 tsp Wyeast Yeast Nutrient
1.00 tsp Irish Moss
2 Pkgs American Lager (White Labs #WLP840) [4 Qt. Starter]


Mash Schedule: 1.24 Qt./#
20 min Protein Rest 122.0 F
90 min Saccrification Rest Heat to 149.0 F over 15 min 149.0 F
10 min Masout Heat to 168.0 F over 15 min 168.0 F

Notes:
Cool to 44 and rack away from cold break, slowly raise to 49 temp then aerate and pitch yeast.

My water filter was froze up, had to bring it in and run warm water over it.
I brought my plate chiller and garden hose inside last night.

By the time I got the burners going my garage warmed up enough.
The worst part was cleaning out the Tun with the garden hose outside.
OH what we do for our beer :beer4

I do know that Sundays brew will be a lot warmer.
32# grain for a 5 gal Barleywine....

60 min. boil

6 lbs. Munich Barley Malt
12 oz. Caramel 10
4 oz. Chocolate
1 oz. Coriander
2 oz. Crystal (Bittering Hops) 30 min.
1 oz. Hallertau (Aroma Hops) 5 min.
6 gm. Mutton's Dry Yeast.

10 lbs Maris Otter (Cargill)
10 lbs Vienna Malt
3 lbs Crystal Malt - 60L
2 lbs Amber Malt (Crisp)
1.5 lbs Carapils
1.5 lbs Dark Wheat Malt
1.25 lbs Victory Malt
12.0 oz Crystal Malt -120L
8.0 oz Melanoidin
1.10 oz Columbus (Tomahawk) [14.20 %] (60 min)
0.75 oz Goldings, East Kent [6.00 %] (45 min)
0.50 oz Fuggles [4.00 %] (30 min)
1.00 oz Goldings, East Kent [6.00 %] (5 min)
1 lbs Muscavado Sugar or (you can use dark Brown Sugar)
@1pt Yeast slurry of English Ale (White Labs #WLP002) From my Oatmeal Stout
Oxygenate with O2
60 min Mash In 152.0 F
10 min mashout Heat to 168.0 F over 20 min 168.0 F
(I had such a big grain bed, I needed to use my RIMS and a burner to ramp up for mashout 168 F.)
Ferment at 68 F

Lost 1 qt of mash liquid, about at that end of the mash, this hurt my numbers.

I think I pitched enough yeast, 5 hours and it's blowing out of a 6.5 gal carboy...
Interesting blow off attachment,there.Does it ever clog up?I'm looking always looking for alternatives and thought about doing that but was afraid it would clog up and damage my jug.My PVC rig is about used up (it's getting harder to clean),had to boil the reducer last time.

I've been using that for years.
It's just an old 3 piece air lock. This one I dropped and the outside cup cracked, so it no longer could be user for and airlock anyway, instead of throwing it away I made it into a blow-off tube.

I put a 3/8 tubing @ 2' long over the center tube in the airlock and it has never stopped up.
(before I use any airlock I cut off the little tip on the bottom this keeps them from getting plugged up)

I clean it by throwing it in the carboy with PBW when I clean everything else up.
After I use the tubing a couple of times I throw it away and put on a new one at @ 50¢.

Remember you need to cut the little tip of all your airlocks and you will never have a plugged airlock.

OK,thanks for the tip tip.Never foun that tip to be a problem,but I never used one for blow off and never attatched an air lock untill fermenation settled down.I use the bubble style air locks but I have a bunch of those 3 pc. air locks in a can somewhere cause I had no use for them.Think I'll go dig 'em out and put thier askers to work. :D

Kegged a zinfandel honey ale for bottle, the one i got drunk and dumped lambic in back in October, anyway it is at 1.001 and 13.7% !!! :beer2 :beer11 :beer9
