This is my first serious attempt at an original recipe from scratch/inventory on hand. Anyone have any suggestions on what I should do different?

I have other yeasts, this just looked like a good (all around) choice.

One thing I like to do with scottish ales is to start with a thick mash, run off a gallon and boil that for 15 minutes before I do the rest of the sparge.
Also, I roast my own barley (not malt).
