On Sunday I brewed an Old Ale using Don Heisler's recipe as a base. Yesterday, after it become apparent that I had accidentally destroyed the Irish Ale yeast I was intending to use, I pitched a couple packets of Munton's dry yeast. By yesterday afternoon it was bubbling away. Time and your taste buds will tell how much I screwed up this batch.

This will turn out just fine. I've used S-05, Irish, English and wlp002 in different variations of this beer.
Just let it set in the fermenter till its done and then some.. keg it and forget about it for several months.

Should be ready in time for SWIRCA..

Save me a bottle

I wouldn't be so bold as to put it on the same board as the club's bourbon barrel old ale.

Brewed another partigyle beer yesterday. Not sure what style it fits. I used my Russian Imperial Oatmeal Stout recipe, but used Belgian yeast. OG: 1.111. 6 gallons to primary fermenter
Is this a RIS? or a BIS? (belgian imperial stout)
The partigyle I added 13 oz of a pretty good tasting Okinawa Black Sugar to the boil that I found at the oriental grocery store. OG:1.048 6 gallons to primary (+ 1 more gallon reserved for yeast experiment).

Brewed up a Robust Porter last night.

Amber malt extract, Chocolate malts, Crystal 120L, and De-bittered Black malt. Northern Brewer hops for bittering and Wilemette hops at 30minutes and last 5 minutes. OG 1.046, a little lower than expected 1.051-1.055. Nottingham dry yeast rehydrated.

With the Scottish 80 shilling in the other fermentor and the Witbier bottle conditioning, June should be a good month!

Next up: Irish Red - as soon as I can get a fermentor freed up.
If your beer doesn't come out exactly right, call a brew-over!

Now your talking. Keep those fermenters filled. It's the only way to build up any stock for aging. :beer2
