Let me know if you want to pick up your yeast.
All the growlers are full after bottling the Imperial IPA last night !!!
I sure as hell hope to make June and that everyone will be thirsty.

I went ahead and made a dark strong last weekend with the fantome to see how it would do. Still doing the primary so I haven't checked the final gravity yet.

Dark Strong fermenting much slower than I'm used too with the Fantome. I had plenty of yeast. It's still plugging away but it's been weakening a tad here and there. Definately still holding in Primary at this point though and we're sitting at 9.1% after 8 days. Smells great, very fruity. Should be pretty malty too.

I thought the Dark Strong stopped at 9.5 but just got back in town and moved it to the kegs and it measured at 10.1%!!!! Also picked up four bottles of Fantome in Atlanta, including two xmas ales. :)

Bottled/sampled the 10.1% Dark Strong. Winner winner chicken dinner!

I think you guys are going to like this yeast. I have never made anything with such esters as what is coming off this ale. Very very fruity and extremely low flocculation. Serious body for having a 1.014 FG. I did not taste any alcohol but there is no deception of a 10% when it hits your mouth and definately when it hits your bloodstream. :D

If you get anxious for the yeast, you're welcome to stop by and grab your vial and a beer. Otherwise, as of now, I am hoping to be in town for this month's meeting and will deliver them then.

Drank one of the real Fantome's, an 8% Saison sort of thing. It was really good. Have the Noel in the fridge for this weekend!

Jimmy, I'm anxious to try the Fantome. I'm going to miss this month's meeting, so I'd like to swing by after work one day this week or next. I'd like to brew a Belgian Pale Ale on Father's day. Let me know which night would work best for you. Thanks.

Jimmy, i brewed a Belgian Pale Ale today using the Fantome. Right now I've got the temperature controller set at 68 deg and it's going strong. Is this appropriate for this yeast or should I raise it a bit? Thanks.

I'd let it rise to the upper 70s if you want fruity character.

Fantome is still hitting the airlock about every 30-45 seconds on the Sweet Potato beer... Almost done. I increased the ferment temp a couple of days ago to 80 when I saw fermentation was really slowing down. It kicked back up and now is at 1.009! I was figuring it to finish higher since OG was 1.083. That makes it 9.8% ABV with an 88% ADF now. I didn't check the pumpkin, but it fermented similar. I'll let them go a few more days then check FG before crash cooling.
I'll be playing with this yeast some more!!!
