19 lbs Maris Otter
1 lbs 8.0 oz Roasted Barley (Thanks John)
1 lbs Special B Malt
8.0 oz Chocolate Organic
8.0 oz Pale Chocolate Malt
3.00 oz Northern Brewer HD [10.80 %] (60 min)
2.50 oz Goldings,US HD [4.40 %] (10 min)
2.50 oz Goldings,US HD [4.40 %] (1 min)
1.00 tsp Irish Moss (Boil 15.0 min)
1.00 tbsp PH 5.2 Stabilizer (Mash 90.0 min)
@ 600 ml in a 3 qt. starter of California Ale Yeast, Cultured 3rd. use (White Labs WLP001)
Mash with fly sparge
90 min 154.0 F 170.0F

Did a second beer with the leftover sugar in the tun.
Continued fly sparge until SG was 1.011 @ 6 gallons into second kettle, and did a 90 minute boil.
"My little Russian" this is closer to a Brown I think

Just did a spur of the moment Wednesday night AG batch.
Batch Size 8 gal.
13 lbs. Pale 2-row
1 lbs. Chocolate Malt
1 lbs. Crystal 80
3 oz. Hallertau @ 60 min.
14g Coopers
O.G. 1.056
I don't know what this will make. Hoping for a Vienna Style Ale.
We will see. Tasted great going into the fermenter. Very Malty.

I must have confidence in this recipe...I cooked another yesterday. I only had 2 oz. of 4.5 Hallertau, so I substituted 1 oz. of 4.9. Willemette.
Should work out fine. Everything else was the same.
Of note is this: I used Saflager 34/70...my first lager yeast. My basement is a steady 68. I want to put the fermenter in the fridge after primary. Maybe at about 54... Any opinions?

I brewed a Belgian Blonde yesterday and had my first eruption, so this a.m. I put on a blow off. it seems the crisis is over. should I put an airlock back on?

Saw a recipe for a clone of The Edmund Fitzgerald Porter in Brew Your Own Magazine. I tried to do things exactly to the recipe but had to change fuggles hops to willamette and London Ale yeast to WLP 028 Scottish Ale Yeast

A couple of weeks ago I brewed a Kölsch. I put that in the basement and it hovered around 62-63F, just a tad warmer than I wanted, but still lower than Wyeast recommends. I used a monster starter, and it still took 10 days to really slow down.
8 lbs Pilsner
8.0 oz Munich Malt
8.0 oz Wheat Malt
1.75 oz Hallertauer [3.70 %] (60 min) Hops 29.0 IBU
Kolsch Yeast (Wyeast Labs #2565) [Starter 2840 ml]
Then, over the holiday, I did an Ordinary Bitter, using the WL British Ale yeast that I recovered and rinsed from an Extra Strong Bitter last month. I didn't use a starter, b/c I forgot, so I just dumped about 1/2 half the recovered yeast in a 1000 ml starter that morning just to get them alert. Worked out just fine.

4.0 oz Special Roast
1.00 oz Cascade [5.50 %] (60 min) Hops 24.6 IBU

Brewed a Belgian Pale Ale on Saturday (http://hopville.com/recipe/127141/belgi ... 03-version). Also, kegged (3 gal)/bottled (2 gal) of Belgian Blond. The jury is still out of this one. It's kind of funky...funky good or funky bad, I'm not sure.
