I was a visitor at your May meeting and very thankful for all the information I got. I am an Extract Brewer (for 3 years) and may make the jump to All-Grain. To my point, while in Gatlinburg TN I went to the Smokey Mountain Brewery and had a Windy Gap Wheat Beer a year ago. The best I have ever had. They describe it as " 70% Malted Wheat, lightly hopped and natural cloudy with a slight veil of brewers yeast. Light gold color with a creamy head". It had a clean and crisp taste. Loved it. Tried a few wheat recepies but haven't been successful.
Could this beer be made using extract or best suited for All-Grain? What would be a recipe to start out at?

There are a lot of really good wheat extracts on the market that are 60-70% wheat with the rest being barley malt. I'm assuming that this was an American Wheat beer and not a hefeweizen. If you can get the hops and any specialty grains right, you will be fine using extract. Might be worth a call to the brewery to see if they will give you the info you need to get the ingredients right. Good luck!

Thats a nice American wheat.
We went to Smokey Mountain Brewery this year and my wife had their wheat.
Very cloudy, a big wheat taste and a big white head. I wish I could recall the hops but there been way too many since then. They list it as 70% wheat and lightly hopped.
