All I know it is not as dark as regular chocolate. Jamail suggests that you need a very subtle chocolate note to make this recipe outstanding. It seems 1/4 lb of the pale is ideal or you can substitute of 1/8 lb of the regular. Looks like B3 is the only ones carrying the pale version in 1 lb chunks so if no one has any here to sell I'll just get the regular from my usual supplier, midwest supplies.
