My Vienna SMaSH.The hop flavor was very spicey on bottling day but it's better now.I didn't like it much at first.Never did all simco before. It has a very unique character that's hard to describe and nothing like the hop profiles I've read.Think I may brew this one again.

Hi guys,
I was at the local Safeway grocery store today and the attached is the loose singles selection.
First time I've ever seen Chimay (let alone 3 varieties!) in a grocery store!

Sipping an American IPA (7.2% ABV 65 IBUs) at the Schlafly Taproom in STL. All the beers On tap are brewed on their 15 bbl taproom system. The AIPA has an incredible hoppy aroma. Its brewed and dry hopped with Centenniel, simcoe, and amarillo. They also have a cask version Trying to decide between a mainock, biere de garde, a black saison or a Belgian single for my final choice.

American Wit
My 'Stupid American' trampling-on-a-Belgian-work-of-art recipe.
American 2 row
Wheat malt
Flaked Oats
Dextrin malt
Fresh Tangerine zest
Cracked Corriander
Saaz
Hallertau
and American Ale, yes, American Ale yeast
Wasn't sure how it would turn out.... But, turns out - I can't get enough of 'em!

Re: What ya Drinkin'??
I haven't bought any beer lately. Made a good choice tonight.
Amarillo, Simcoe, Centennial;nice combo and good balance.

St. Louis can make good beer.

Ditto to Dwayne's assessment! I had one this weekend as well. Next time you're in St. Louis, stop by the Schlafly Tap Room and and a pint. It had the hoppiest aroma I've ever experienced.Dwayne_Delaney wrote:I haven't bought any beer lately. Made a good choice tonight.

Re: What ya Drinkin'??
I cleaned out my beer cooler/chest freezer/kegerator of old homebrew to make room for some kegs. Some of them go back to 2005 and all were at least 2 years old. I used to save one or two bottles of each batch back then.
I had some coffee stout, several vintages of american amber, a few different types of wheats, smoked porter, doppelbock, a pepper beer, chocolate stout, oktoberfest, blonde, and several unidentified.
On the average, most were more bitter than I remember. And they seemed to be one dimensional. No hop aroma or flavor. Undercarbonated. Little head. No sourness or funk detected. Very clear and brilliant. Most tasted oxidized and smelled cardboardy. It was strange how they all seemed to taste similar. The doppelbock from 2008 faired the best. It was really the only one worth drinking and I still have a bottle left.
Lesson learned: drink that fresh homebrew now!
The 2007 cider was awful. The 2009 is still quite tasty. I'll bring a liter to SWIRCA.

Re: What ya Drinkin'??
I think it depends on the style of beer and how you bottle condition. I really enjoy drinking stuff I've aged. But then a lot times I won't even bottle for 6 months.
