Wheat beer / fruit
Ok, so Someone school me. I want to make a fruity summery wheat beer. Do I use a standard wheat recipe and just add fruit or some sort if flavored extract? How much should I add if either for a 5 gallon batch? When should I add it? Etc...
Any comments or ideas or recipes would be appreciated!!

Dwayne's Watermelon Wheat is ALWAYS a big hit at our summer beer festivals, so he should be able to advise.

Re: Wheat beer / fruit
There's a great article in the latest BYO about adding fresh fruit to beers. I plan to brew the Raspberry Jalapeño Wheat recipe from the article.

I am no expert, but this is the recipe that is popular with the masses.
For 5 gallons into the fermenter:
5 lbs White Wheat Malt
3 lbs Pale Malt (2 Row)
8.0 oz Caramel/Crystal Malt - 10L
8.0 oz Honey Malt
1.00 oz Hallertauer [3.80 %] (60 min)
1.00 oz Hallertauer [3.80 %] (10 min)
2.00 oz Natural Watermelon flavoring (Williams Brewing) at Bottling/Kegging
1 Pkgs Nottingham
Single-infusion mash at 155 degrees.
OG 1.050 @ 75% efficiency
Very simple American-style wheat recipe that can be used as a base for any fruity wheat beer.
I get the Natural Watermelon flavoring from Williams Brewing; the only one that I will use.
Their Raspberry and Apricot are also very good; add flavoring to taste.

Thanks Dwayne!
You used 2.00 oz of flavoring. Is the 2oz going to be standard across the board with any flavoring of that type?
If Kegging this rather than bottle then I would just add the 2 oz to the kegged batch right?

Also you show a 5gal batch, is that 5gal into fermentor, or 5gal packaged?
Also what is the OG of this one?
Just trying to make sure my calculations are correct.
Thanks again!
