How long is it OK to store grain [with tight fitting container]

15 -20 years if you can grind, mash, ferment, bottle and age at cellar temps. :beer2

This says 6 months for base and longer for roasted. They are in the business of selling grain so take it for what it's worth. I heard a maltster say on a podcast a year should be fine if moisture is kept away from it but he would taste the grain before using it.

Hmm...I have some grain that I have had for more than a year (~ 16 months ).It still smells great,fills the room with a pleasant,fresh,cereal aroma when I open the bin.Tastes great,too.I was skepticle,at first,but I had to brew or go nuts and I had zero funds for new grain.Also,it was just too much grain to just toss out.My beer turned out very well;malt aroma,foam production and foam stability exellant.A very enjoyable beer.However,I'm covinced that it may not hold up much longer,but until then... :beer2

PS Conversion was also on track and my mash efficiency went up from my previous batch. :shock:
