USI Non-credit Intro to Brewing Class

I was contacted today about teaching a non-credit homebrewing class out at USI through their Outreach office for next spring (Jan 30-May 4). This may be more of a theory class since they don't have any kitchen facilities for a real hands on indoor brewing session. I guess an outdoor brewing session might be arranged, I'm trying to work out the details and what I can and can't do. Anyway, it looks like I have free range to teach the class whenever I want for the Spring session. I can set how many and how long each class is. The trouble is I have to tell them tomorrow (or maybe Monday) what my plan is and I'm just not sure how many classes it would take. I'm thinking at around 8 hours of instruction but maybe that is too much for an intro class. I'm looking for opinions and suggestions on this.
The way the semester is scheduled, the class would end right at Big Brew time and I'll probably add that in as part of the class. We might have a big crowd next year!
