Fermcap S

Post by Michael Erwin » Sat Oct 15, 2011 11:39 am

I just started using Fermcap S recently in my boil. That stuff is magic!

Today I used it in my starter, oh wow, no concerns about boiling over in the flask. That was previously pretty much a given. The minute you take your eyes off the flask, whoosh goes the boilover. But not now!

So, here's what I think I know about Fermcap S:
  • It's silicone based. Dimethyl polysiloxane.
  • It operates by reducing surface tension, which hinders bubbles from lasting long.
  • Use = 2 drops per gallon.
  • Supposedly it falls out during/after fermentation or is stripped out by yeast flocculation.
  • Supposedly it increases head retension and IBU levels in the finished beer.
Here's one thing I don't know: If you use it in the boil, do you need to add more during fermentation?

And another: is there anyone who has used it before but stopped for any reason (besides just running out)?

As I said, this stuff is magic. Get some.

You're right this stuff works great. I use it in every batch now. No need for a blow-off tube.
You do have to add it to the fermenter even if have added it to the boil though.

I've used it for a couple of years now, and feel it's the best improvement to make brewing easier since the turkey fryer.
Here's some additional notes:
I don't believe it hinders yeast health, or sticks to yeast cells because on
Re pitching yeast batch to batch, the Fermcap S also transfers so you don't have to add as much on successive batches.
I believe it aids in reaching a lower final gravity by keeping all that good active yeast in the fermenting wort, than being blown off out of the beer.
I've not had a batch infected by adding it directly to cooled wort.
A small 4 oz bottle lasts a long time.
You gonna buy one, or be one?
.....I'm gonna be one!

Good info, guys! I was sold after Dwayne was singing it's praises at Big Brew day. I bought some and if I ever have time to brew again I plan to use it!
If your beer doesn't come out exactly right, call a brew-over!

I use it in the boil of every batch. I have used it a couple of times in the fermenter. I get it in 1 gallon jugs. Not sure what the price is now that Brewers' Supply has taken over Crosby & Baker, but if enough of you are using it I'm sure my price would be cheaper than retail on a small amount.
