OVHA IPA

I have an idea for a somewhat fun beer I would like to brew that all can contribute to in some small way. I am going to make an IPA with the following timings for hop additions : FWH, 60, 20, 10, 5, 1, DryHop*.

The malt bill will be the standard fare (2 Row, Munich, 15L Crystal, CaraPils) and I think I am going to use PacMan yeast on this one simply because it's cold these days and PacMan likes it cold.

I would like folks to reply to this thread with one hop variety that they would like to see added for the 'next' addition down. When all the hops are added I will figure up the recipe to make about a 65 IBU IPA.

Also, for the sake of interest, say why you picked it and what you think it will add to the beer. I'd like to get folks' opinion on how the hop profile will be before we taste it to see how close it comes to our prediction.

For the sake of simplicity, I'm gonna put my $0.02 in there right now, I want MAGNUM as the 60 min addition ....

Next person to reply to this thread, pick one variety as the First Wort Hop (FWH) additon - if you're not familiar with the technique, think 'aroma'.

What about using Sterling? They have an aroma that is a cross between Saaz and Cascade, tilted to the Cascade side. Rogue uses it as the only hop in their

Sterling it is ! Pilsy, cascad'y, nice ... I've never used it so it will be an adventure.

And I appreciate the donation ... I was planning on buying the stuff myself, but if you're gonna give me some how could I refuse.

So who wants to recommend the 20 minute addition? It is an all-important pivotal moment in brewing when we are just crossing the threshold between imparting taste and aroma.

Do you vote for citrus or do you cast-aside those hippy west coast ways and go toward a more European direction? You decide...

Let's use Willamette as 20 minute hops. I've used this with Magnum as a bittering hop and they go well together. Not a citrus-y hop and has an aroma similar to Magnum without the high alpha acid. Good flavor and aroma

Liberty might blend well with what you have so far for the 10 min.

Use for: German style lagers

What I would do at this point would be to finish the last two additions with Centennial and dry hop with Cascade as this is a common finish (at least it is in my brewery). This way, the familiarity of the last two "C's" combined with the mystery of the early additions will give you something to compare. May be that one of those early bittering hops will enhance or really screw up a beer that most of us know should be damn good with the usual standard fininshing hops. Wait.... I was just supposed to recommend one hop wasn't I? Sorry!

1/2# - Crystal (15L)

1oz - Sterling (First Wort Hop)
3/4 oz - Magnum (60 Min.)
1.5 oz - Willamette (20 Min.)
1 oz - Liberty (10 Min.)
1 oz - Centennial (5 Min.)
1 oz - Centennial (1 Min.)
1 oz - Cascade (Dry Hop)
Additives : Servomyces, Whirlfloc, pH5.2

Yeast : PacMan or US-56 (gotta see the prevailing temps at brew time)
