I don't know of any homebrewers using sanke kegs for serving. Everyone uses Cornelius kegs that allow for easy disassembly and cleaning, plus batch size more easily matches keg size. A lot of brew pubs only use sanke kegs with bungs in the side also for ease of cleaning, and refilling kegs.

You gonna buy one, or be one?

I know to remove the center "stem" that you remove a large flat split ring around the top and then twist it a quarter turn. They sell tools for this but I made my own. Be sure there is no pressure in the keg! With out some type of caustic clean in place system it would be tough to get it clean inside but homebrewers are inventive and adaptive. Good luck!

I'd cut the tops out to make kettles out of them & buy some cornies for kegging. Manually cleaning is going to be difficult.
