I do have a double your money back return policy just send in the RMA.
I would not have a problem, if it was my batch, with getting some 02, 04 or 05 and add it today. I've done this several times and it's usually comes out just fine.

If you've got something (old hoses, nasty plate chiller like me, dirty ball valves, etc) hiding lots of bugs causing infections, the delay of fermentation will not help things. It's a competition. You add so much yeast that the others things (wild yeasts in the air, bacteria floating on dust, ect.) don't have a chance to survive. And once you start getting some alcohol in there they really don't have a chance. Giving the bad critters such a head start on that tasty sugar is not good, but if they are still at a low level, a good dose of yeast might save the batch. Give it a shot.

Thanks Guys! To update, I went by the co-op and picked up some S-05. When I got home, I had a bit of a Christmas miracle...I had some slow, but definite airlock activity. When I removed the airlock there was a wonderful fruity aroma. Apparently the yeast hadn't been all dead, it was only mostly dead (thanks Miracle Max!) I went ahead and dosed it with a packet of 05 anyway to relieve the stress...both the yeast's and my own.

Time to throw out all the old hoses and use a different sanitizer for a while.

Yesterday I brewed the "ones that got away"...my two recent failures, an English IPA (infection) intended for Big Turkey and a vanilla porter (stuck fermentation). Both are nestled all snug in their beds....

Irish Red, snuggled in the chilly willy for a short winter's nap. German Pilsner lagering in the fridge, should be ready to bottle next week.

I may need to brew the lager again, winter and all....

Happy brewing in 2012!

Imperial Pale Ale is in the primary and burbling away nicely. It measured an OG of 1.070 and should finish in the 6% ABV range. This is my first try with a Brewers' Best extract kit and dry yeast. My previous brews have been Northern Brewer extract kits and Smack-Pack yeasts. The Imperial should be ready for the February meeting.

For the January meeting, I will have the Dead Ringer IPA from the Liquor Locker outdoor brew day as well as a Black IPA.
