That worked for me in the past just using a cloth towel.

I found this picture of an old Evansville Brewing Association on the wall of a restaurant the other day, it said the original picture is at USI. According to a website I found, apparently Bruckens Restaurant Supply used to be a brewery from 1890-1914

From the video is seems to use a chemical reaction to generate the co2. Pop-rocks technology.

EDIT: it's citric acid plus potassium bicarbonate in the "eco2activator" powder.

I asked a tour guide about the black fungus on the aging buildings once. You can see it all the distillers. I didn't know it would grow away from the angles share.
