Beer: Sweet O'Cream Ale Style: American Pale Ale
Type: All grain Size: 3 gallons
Color: 14 HCU (~9 SRM)
Bitterness: 27 IBU
OG: 1.069 FG: 1.016
Alcohol: 6.9% v/v (5.4% w/w)

Grain: 7 lb. Marris Otter Total Grain: 8 lb.
4 oz. American crystal 80L
6 oz. Dextrine malt (Cara-Pils)
6 oz. Flaked oats

Mash: 71% efficiency
Used Boil In A Bag Method.Steeped grains in nylon bags 3.25 gal.water
at 152-155°f.40 min.Raised to 158°f by infusion and direct heat.
Rest 20 min.Removed bags and dunked in 2gal. 170°f.Stirred and removed
bags.Poured run off into boil pot.Increased efficiency 6% over batch
sparge.

Boil: 60 minutes SG 1.059 3.5 gallons
4 oz. Lactose
Irish Moss Tbs,Sweet Orange Peel 1/2oz.@ last 15min.

Hops: 12g Northern Brewer (6.5% AA, 60 min.)
8g Cluster (7.9% AA, 40 min.)
4g Kent Goldings (4.8% AA, 15 min.)

Yeast: Nottingham Dry Ale Yeast.

Log: Pitch slurry @ 66°f Ferment@68*f in water bath with jug wrapped in
cloth.Saturday,3/14/2009.
Log: Tuesday PM,primary subside,moved out of water bath.Smells like fresh bread :) mmmm... 8) 8)

Since I'm going to have some Trappist yeast from Belgian Blonde that's in the fermenter now, looks like it's time to brew like a monk again. Saturday's project is Belgian Dark Strong Ale (if all goes as planned, it will end up 9.5% ABV). :beer11

Hey,I just bottled this tonight.Dwayne & Charley were talking about priming with sucrose,so I gave it a try.If it ruins my beer I'll never speak to either of them again :razz: (just kidding) :razz: .I think it will be fine.

Beer: Oat Brown Ale
Type: All grain Size: 3.25 gallons
Color:
31 HCU (~16 SRM)
Bitterness: 26 IBU
OG: 1.056 FG: 1.016
Alcohol: 5.1% v/v (4.0% w/w)

Grain: 6 lb. Belgian pale
1 lb. American crystal 90L
4 oz. Flaked oats
4 oz. American Vienna

Mash: 65% efficiency
Brew In A Bag method:Crack the malt and steep in the brew pot using
general mash schedule temperatures...no sparging needed.

Boil: 60 minutes SG 1.052 3.50 gallons
2 oz. Corn sugar
Irish Moss 15 min.

Hops: 8g Cascade (7.9% AA, 60 min.)
8g Hallertauer (3.9% AA, 60 min.)
8g Kent Goldings (4.8% AA, 60 min.)
4g Styrian Goldings (3.5% AA, 15 min.)

Yeast: Nottingham Dry Ale Yeast,11g Pkg.

CO2:2.5 vol./2.75 gallons(25 12oz. btls) 70 grams cane sugar right out of the box.

Can't wait to see how it does.Should be ready by next meeting. :D

I drank about half of this one before I realized that it was a little green.1/2 of it was in the fridge udergoing cold conditioning and the other in the closet.

Well...it's ripe now and I drank 2 btls. WOW,just wish it was a little hopppier.I made a 2nd batch last Saturday with more hops,so I'm anxious to see how it turns out.

from Pale Ale 1-1-09.Purpose:Improve hop utilization and hop
character + improved head retention by eliminating dry hop additions.

Type: All grain Size: 3 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 25 IBU
OG: 1.055 FG: 1.016
Alcohol: 5.1% v/v (4.0% w/w)
Water: 1/2tsp.Gypsum in boil.
Grain: 6 lb. American 2-row
1 lb. Dextrine malt (Cara-Pils)

Mash: 71% efficiency
BIAB 153*f w/Dunk Out 168*f
An adaptation of Brew In A Bag where 2 gal. water is heated
in a separate pot and used as a rinse like a Mash Out on Batch
Sparging.

Boil: 60 minutes SG 1.055 3 gallons
Irish Moss 1-2tsps.

Hops: 0.25 oz. Kent Goldings (5% AA, 60 min.)
0.60 oz. Kent Goldings (5% AA, 40 min.)
0.30 oz. Kent Goldings (5% AA, 15 min.)

Yeast: Nottingham Dry Yeast / 8 grams direct @ 70*f pitched dry in 5 gallon carboy with blow off tube.10:45pm.

Moved to basement 69*f.

Note: Recent fermentations with Nottingham have been vigorous but not exuberant.Kruesen is typicaly 2 - 3 inches high with rapidly roiling wort beneath.Generaly subsiding in 2 - 2 1/2 days.

Log: NO dry Hops this time.

Carbonation: 3.1 volumes Corn Sugar: 3.34 oz. for 2.75 gallons @ 70°F

Not decided on co2 yet but,we'll see.I'm wondering if a little less would be better.Wadaya think?

I wonder if CO2 may be masking some beneficial characters.(?) 8)

Bitterness: 32 IBU

Missed my desired OG and landed on 050 but it should still be OK.Shoulda boiled a little longer.I dissolved my candy sugar in a quart of water and didn't allow for that.

Grain: 4 lb. Marris Otter Total Grain: 4lb. 12oz.
4 oz. American crystal 10L
6 oz. Dextrine malt (Cara-Pils)
2 oz. Flaked oats

Mash: 70% efficiency
BIAB

Boil: 60 minutes SG 1.045 3.75 gallons
1 lb. Cane sugar

Worflock last 15 min.

Hops: 3g Galena (10.5% AA, 60 min.)
14g Cluster (7.9% AA, 40 min.)
6g Cluster (7.9% AA, 15 min.)

Yeast: Coopers Dry Ale Yeast 6 grams.
Red Star Champagne Ale Yeast 3 grams.

Carbonation: 2.8 volumes Cane Sugar: 2.76 oz. for 2.75 gallons @ 70°F

Oh,man.What have I done?This has beeen in 2ndary for a couple weeks now.I just sampled it.

Clear as a bell(we'll see,about chill haze :D )Tastes wonderful.If this flavor holds up through bottle conditioning...I won't be able to restrain myself :D .I'm gonna bottle it Saturday.

Much of the primary went like 64*f due to the water bath.Diacytal rest was needed at beginning of secondary @ 71*f 'bout 48 hrs.

Tomorrow I'll bottle Belgian Dark Strong Ale made 3-28-09. OG was 1.076. I just checked FG and it was 1.008. That figures out to 9.6% ABV and attenuation was 89% with White Labs Trappist yeast.

6# Belgian Pils
3# American 2 row
2# Munich
1# White wheat malt
2 oz. Black Patent
1 quart honey (end of boil)
1/2 oz. Glacier pellets 60 min.
1/2 oz. Vanguard leaf 60 min.
1 oz. Vanguard 25 min.
1/2 oz Glacier 15 min.
1 oz. Hallertauer 10 min.
1/2 oz Vanguard dry hop in secondary
WLP 500 Trappist ale yeast from blonde ale
Yeast nutrient
Mash at 148F w/ 5.2 powder for 60 min. 90 minute boil.
7 gallon boil volume

More Saison - this time with the Fantome yeast that we got from the Bloomington club.

Also, a single decoction American Wheat with Kolsch yeast just to see what the decoction does.

I'm going to be brewing an IPA (all Centennial hop additions) kit I got from B3 very soon. I attempted to top crop yeast from a dry irish stout I made...well, I got the yeast I wanted but didn't exactly top crop the correct way. Brewed a mild brown this morning.

Having Fridays off from work in a sluggish economy rocks. :razz: (as long as I can afford grain )

1.00 oz Williamette [4.50 %] (15 min)

Finally brewed by dad's favorite red ale today. His keg has been empty for some time. I cleaned out the grain storage bin and threw in all kinds of weird stuff so no telling what is going to come out of it.
