This all came about when Bell's sent a Cease and Desist letter to Northern Brewer demanding them to change the name of their Three Hearted Ale clone kit last week.

Hmmm, my experience with bottle conditioning and aging is different. Had a 10 year old Chimay one time that was to die for with my buddy. Chimay has some hop to it to. Course not like an IPA though.

Heres an article about why yeast changes sugar to alcohol, its some sort of defensive mechanism designed to outperform competitors
