When to check acid level of wine
What is the appropriate time to check for acid levels of my new wine?

I usually do it @ an hour after I drink it.

You don't need to, it's 0.68% as tartaric, I titrated mine when I transferred it to the secondary, which you should be doing any time now. Yours will be similar, might be a bit lower since you selected riper looking grapes, but still right on for white wine.
Mine was all milky looking after starting out crystal clear, but it's clearing up just fine.

How long are you going to age it before you bottle? I usually bottle in Feb, but this one seems like it's gonna clear in another week or so.

I wouldn't be surprised if I ended up bottling this Cayuga before New Year's. It's clearing very nicely and the only major step I plan is to put it in the fridge and drop the tartrates.
