Well,my 2 step infusion mash Has Been shot down as incorrect temperature rests and rightly so according to entities in the know.Furthermore,I confess to practicing non orthadox procedure and will promptly submit to the first Royal Officer of 'The Mash Police'that I encounter and subdue myself to due proccess.BUT,I have hit an all time high BHE (for me ) of 75% which cascaded upwardly as of 65%,68%,70% and,now,75% using a dough in rest of 20 min. @ 115 deg F/conversion rest of 75 min. @ 156 - 152 deg.F and rinse @ 168 deg after 1st runnings.

Expected OG @ 70% was 1.048 but the added BHE @ 75% kicked it up a knotch (BAM!).Now all I have to do is be repetitive,huh? 8)

OG: 1.062 FG: 1.012

1 oz. Hallertauer (4.5% AA, 45 min.)
1 oz. Hallertauer (3.7% AA, 15 min.)
Mash: 75% efficiency
Boil: 60 minutes SG 1.052 4.0 gallons.

Yeast: Coopers Dry Ale

Take this for what it's worth, and it's mostly opinion, but I think the search for higher efficiency once you are in the 70% range can start leading to more off flavors. This could be due to more tannin extraction from the husks possibly correlated with pH related issues during the sparge.

Grain is relatively cheap. I'd say get your crush good, use some pH 5.2, and then find a comfortable extract percentage and adjust your recipes to what you're expecting.

I run 78% on average and don't find off flavors.
In fact, I've always thought my beers were better with step mashes that also result in better efficiencies.
What would Jesus Brew?

Thank you,Chris Alvey,your opinion is welcome and appreciated.My efforts toward higher BHE are not exactly aimed at conservation or cost.Grain IS cheap and,in my house,abundant.My aim is to fit my process into my small,primitive, budget dictative equipment set up.Higher BHE seems to be also cheap and bigger/better equipment is not.

Furthermore,I'll take said comment as good advise and not run my experiment headlong to it's death and end up with 'some kinda drain cleaner'.
