Kentucky Common

I came across this recipe for a 'Kentucky Common' beer recipe that seems to be an old style brewed around these parts. It includes a sour mash (a-la Bourboun.) I am half tempted to try it just for history's sake.

This might be an interesting SWIRCA (or other) festival beer.

I would probably substitute for the Cluster, but whatever.

6 lb. Marris Otter (Sour 20%, see below***)
13 oz. American crystal 120L
3.5 oz. American chocolate
2 lb. Gelatinized grits*** (see below)
